Oatmeal-Chocolate Chip Cookies


Sometimes basic is best; my (older) son made these for Shabbos last week.

1-1/4 cups margarine, softened
3/4 cup brown sugar
1/2 cup granulated sugar
1 egg
1-teaspoon vanilla
1-1/2 cups unbleached flour
1-teaspoon baking soda
1-teaspoon cinnamon
1/4 teaspoon nutmeg
3 cups old-fashioned oats
1 (12 oz.) package (2 cups) chocolate chips

Preheat oven to 375 degrees F. Cream together margarine and sugars. Beat in egg and vanilla. Add flour and spices and mix well. Stir in oats and chocolate chips. Drop by rounded tablespoonfuls onto ungreased cookie sheets. Bake 8 – 10 minutes. Cool on cookie sheet for 1 –2 minutes; then remove to wire rack to finish cooling.
