Spicy Cheesy Cornbread


This is perfect for a nine days menu.

1-1/4 cups yellow cornmeal

¾ cups flour

½ cup grated Monterey Jack cheese

1/3 cup butter, melted

1-1/3 cups buttermilk

1 tablespoon sugar

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon cumin

2 canned chipotle chilies in adobo sauce, minced

2 eggs

Preheat oven to 450 degrees.  Combine all ingredients and mix well. Pour into greased 9-inch square pan and bake for 20 -30 minutes, until golden brown (start checking after 20 minutes).  Best served warm.
