There are so many versions of these after-school and after-camp snacks. This is one of the easier ones – and one of the tastier ones as well.
4-1/2 cups old-fashioned oats
1 cup flour
1 teaspoon baking soda
1 teaspoon vanilla
2/3 cup margarine, softened
½ cup honey
1/3 cup brown sugar
1 cup semisweet chocolate chips
1 cup shredded coconut
Preheat oven to 325 degrees. In a large bowl, stir together the oats, flour, baking soda, vanilla, margarine, honey and brown sugar until well combined. Stir in chocolate chips and coconut. Press into lightly greased 9 x 13-inch pan. Bake for about 20 minutes – until lightly browned. Cool for at least 10 minutes before cutting into bars.
