My daughter says these cookies are really good – and I believe her!
1-1/2 cups (3 sticks) margarine, at room temperature
1-1/2 cups sugar
1-1/2 cups brown sugar
3 eggs
1 teaspoon vanilla
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
3 cups flour
3 cups oats
2 cups semisweet chocolate chips
2 cups shredded coconut
2 cups chopped toasted pecans
Preheat oven to350 degrees. Cream together margarine and sugars until fluffy. Beat in eggs and then vanilla. On low speed, add flour, baking powder, baking soda and cinnamon until combined. Stir in oats, chocolate chips, coconut and pecans. Drop by ¼-cupfuls onto greased baking sheets. Bake for about 15 minutes. Cool briefly on cookie sheets before removing to wire rack to finish cooling.
