Roasted Corn Salad


And easy side salad.

½ cup olive oil
1/3 cup lemon juice
1 tablespoon red wine vinegar
1 teaspoon minced garlic
1 tablespoon oil
1 (16-ounce) package frozen corn, thawed
1 cucumber, peeled and chopped
2 tomatoes, chopped
2 avocadoes, chopped
¼ cup imitation bacon bits

Whisk together olive oil, lemon juice, red wine vinegar and garlic.  Set aside.  Drizzle oil over corn and place in a baking pan in single layer.  Broil for 5 to 10 minutes- until toasted but not burnt.  Cool.  Combine with other cucumber and tomatoes and dressing.  Cover and chill for at least 2 hours.  Gently stir in avocado and sprinkle with imitation bacon bits.
