Orzo & Feta Salad


This is nice for Sunday lunch – I know it was just Shabbos but everyone still has to eat, right?

1-1/2 cups orzo, cooked and drained

1 cup frozen petit pois, defrosted and drained

¾ cup feta cheese, crumbled

3 tablespoons balsamic vinegar

2 tablespoons olive oil

½ teaspoon minced garlic

½ teaspoon salt

¼ teaspoon pepper

Combine orzo, peas (petit pois) and feta in a large bowl.  Whisk together remaining dressing ingredients and pour into salad.  Toss until well combined, cover and refrigerate for at least 1 hour before serving.
