Salmon for dinner can be a challenge if every time you cook it, you serve it the same way. Sometimes you just need a little crunch to make something slightly boring really create a zing. This is what I try to do to a typical piece of baked salmon. The combination of the teriyaki marinate with onion garlic chips really makes this salmon dish a dinner winner!
2 8 oz. pieces of salmon
¼ cup teriyaki sauce
2 Tbsp. lite mayonnaise
2 Tbsp. Dijon mustard
½ tsp. wasabi (optional)
Large bag of onion garlic potato chips
Preheat oven to 350 degrees.
Place salmon into an oven safe 9×13 baking dish.
In a small bowl, mix teriyaki, mayo, mustard and wasabi, pour over salmon coating completely. Bake salmon for 12-13 minutes. Remove from oven and sprinkle crushed potato chip on top.
