Ingredients
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- Pinch of salt
- 1/2 cup margarine
- 1/4 cup granulated sugar
- 2 large eggs
- 4 tablespoons honey
- 1 teaspoon pure vanilla extract
- 1 cup chopped dried figs
- 1/2 cup chopped walnuts
Preparation
- Preheat oven to 350 F. Grease 2 baking sheets and line with parchment paper.
- In a large bowl combine flour, baking soda, cinnamon, cloves and salt and mix well.
- In the bowl of a stand mixer fitted with the paddle attachment, cream margarine and sugar for 2 minutes or until fluffy. Add eggs, one at a time, beating well to combine. Add honey and vanilla and mix well. Add flour mixture and stir to combine. Add figs and walnuts and stir just until well mixed.
- Place 12 heaping tablespoons on each baking sheet and bake for 15 minutes or until lightly golden. Remove from the oven and immediately press down cookie with the bottom of a glass to form a flatter cookie. Let cool 10 minutes on baking sheet and then cool completely on a wire rack. Repeat with remaining dough.
