I could give it a fancy name but this is what it is – a simple, delicious one-pot meal.
2 pounds Italian sausages (I like a mixture of hot and sweet), cut into 10-inch pieces
6 potatoes, peeled and chopped
2 (8 ounce) packages sliced mushrooms
1 onion, chopped
1 teaspoon minced garlic
4 tablespoons olive oil
1 teaspoon oregano
1 teaspoon basil
½ teaspoon pepper
2 (28 ounce) cans crushed tomatoes
Preheat oven to 375 degrees. Toss together all ingredients except tomatoes and place in a baking pa. Roast for ½ hour. Add tomatoes and cook another 30 minutes.
