A nice side dish or vegetarian entrée. If you are serving this as an entrée, I would probably double the recipe (depending on the size of your family). This serves 5 to 6 as a side.
4 sweet potatoes, peeled and cut into cubes
¾ cup orange juice
2 teaspoons corn starch
½ teaspoon allspice
½ teaspoon grated fresh ginger
½ teaspoon cumin
1 (15 ounce) can black beans, drained
1 cup cooked rice
Place sweet potatoes in a saucepan with water to cover. Bring to a boil; reduce heat and simmer for 10 to 15 minutes or until tender. Drain. Mix orange juice, corn starch, allspice, ginger and cumin in the same pan. Bring to a boil and simmer for 1 minute or until thickened. Return potatoes to the pan and stir in beans and rice. Cook until all is hot.
