There are great recipes for banana bread, banana muffins, banana cakes – but I was looking for a cookie. I finally found the recipe I was seeking.
1-1/2 sticks (3/4 cup) margarine, softened
¾ cup brown sugar
¼ teaspoon baking soda
2 eggs
1 banana
1 teaspoon vanilla
2 cups flour
1-1/2 cups semisweet chocolate chips
1 cup toasted walnut pieces
Preheat oven to 350 degrees. Cream together margarine, sugar and baking soda. Beat in eggs, banana and vanilla until smooth (ish). On low speed, add flour, the chocolate chips and nuts. Drop by rounded tablespoonfuls onto ungreased cookie sheets. Bake for 10 to 12 minutes. Remove to wire rack to cool completely.
