(Almost) One-Pot Mexican Beef & Macaroni


This is what I am making for dinner tonight.

1 (16 ounce) package macaroni
1 tablespoon oil
1 pound ground beef
1 onion, chopped
1 (28 ounce) can diced tomatoes, undrained
1 (15 ounce) can corn, drained
1 (8 ounce) can tomato sauce
1 (4 ounce) can chopped green chilies
½ teaspoon cumin
½ teaspoon pepper
¼ cup finely chopped cilantro

Cook macaroni according to package directions.  In a Dutch oven, sauté beef in oil over medium-high heat.  Add onion and continue cooking and stirring until meat is brown, breaking it into small pieces.  Stir in the tomatoes, corn, tomato sauce, chilies, cumin and pepper.  Bring to a boil.  Reduce heat and simmer, uncovered for about 5 minutes. Stir in macaroni and cilantro and heat through.
