My mother used to make these and, although I rarely make them myself, once in a while I just get the urge – and I am never disappointed!
1 cup (6 ounces – I know; it doesn’t make sense mathematically) semisweet chocolate chips
2 tablespoons margarine
1 egg, beaten
3 cups colored miniature marshmallows
½ cup chopped walnuts
1 cup coconut
In a heavy saucepan, melt the chocolate chips and the margarine over a low heat, stirring occasionally. Stir a small amount of the chocolate mixture into the beaten egg, then pour the egg into the pan, stirring constantly so it does not curdle. Cook for 2 minutes. Let cool. Gently fold in marshmallows and nuts and chill for ½ hour. On a sheet of waxed paper, shape dough into a 1-1/2-inch diameter log. Roll in coconut to coat sides. Wrap up tightly. Freeze for 4 hours or overnight. Remove waxed paper and cut into slices.
