Mexican Meatballs Mole


This is the real thing – meat with chocolate.  It sounds strange but it tastes great.  Serve with Mexican Rice.

1 pound ground beef
1 egg
½ cup soy milk
¾ cup crushed corn chips
2-1/2 tablespoons flour
2 tablespoons shortening
½ teaspoon minced garlic
2 tablespoons sugar
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon oregano
1 (29 ounce) can diced tomatoes
1 (1 ounce) square unsweetened chocolate
1 cup water

In a large bowl, stir together meat, egg, soy milk and corn chips until well mixed.  Cover and refrigerate for 1 hour.  Gently shape into about 20 meatballs.  Roll meatballs lightly in  2 tablespoons flour, coating completely.  Slowly heat shortening in a large, heavy skillet with a tight-fitting lid.  Sauté the meatballs until browned.  Remove from skillet.  In the same pan, sauté onion and garlic until soft.  Remove from heat. Combine the sugar, chili powder, cumin, oregano and remaining ½ tablespoon flour.  Stir into skillet along with the tomatoes, chocolate and water.  Mix well.  Bring to a boil, stirring constantly.  Reduce heat and simmer, covered, stirring occasionally, for 45 minutes to 1 hour. Return meatballs to skillet and simmer an additional ½ hour.
