You can never have enough different kinds of mandelbroit recipes is my philosophy. Here is a simple one – but you know, simple is frequently the best.
2-3/4 cups flour
1 cup sugar
2 teaspoons baking powder
1 tablespoon oil
1 teaspoon vanilla
3 eggs
1 egg white
Cinnamon-sugar mixture (2 tablespoons sugar, ½ teaspoon cinnamon)
Preheat oven to 350 degrees. Stir together dry ingredients. Beat together oil, vanilla and eggs. Stir into flour mixture; dough will be on the dry side. Knead the dough until it comes together and then divide into two logs. Place on a greased baking sheet. Brush with egg white and then sprinkle with cinnamon-sugar mixture. Bake for 30 minutes. Carefully cut into ½-inch slices. Return to oven for an additional 10 minutes. Cool on wire rack. Great with your morning, afternoon or evening coffee.
