These are for the purist – and they are the best I’ve ever had.
1 cup (2 sticks) margarine, at room temperature
1 cup sugar
1 cup brown sugar
2 eggs, at room temperature
2 teaspoons vanilla extract
1-1/2 cups smooth peanut butter
3-1/3 cups flour
1-1/2 teaspoons baking soda
Preheat the oven to 300 degrees. Lightly grease 2 cookie sheets.
Cream together the margarine and sugars. Beat in the eggs, vanilla and peanut butter mixing well. Add the flour and baking soda and mix until everything is well incorporated.
Please tablespoonfuls on the prepared cookie sheet and flatten with a fork. Bake until brown on the edges, about 15 to 18 minutes. Do not overbake. Cool for 2minues then remove to rack to finish cooling. Makes about 3 dozen. Freezes well.
