Here’s a plan-ahead healthy breakfast. It’s particularly good on those cold winter school days but there’s no reason you can’t eat it in the summer also.
2 cups frozen blueberries or 4 Granny Smith apples, chopped
2-1/4 cups old-fashioned oats
3 large eggs, beaten
1 cup brown sugar
1 cup applesauce
1 tablespoon cinnamon
4 teaspoons baking powder
1-1/4 cups water
1 cup milk
¼ cup melted margarine
Preheat oven to 350 degrees. Place fruit on the bottom of a lightly greased 9 x 13-inch pan. Mix together remaining ingredients and pour over fruit. Bake, covered, for 30 minutes and uncovered for 20 more.
