This is the perfect easy use for leftover bananas. I like to throw in some chopped walnuts but it depends on your crowd.
2-1/2 cups flour
1-1/2 cups sugar
1-1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup mashed bananas
2/3 cup non-dairy creamer
½ cup shortening
1 teaspoon vanilla
2 eggs
Preheat oven to 350 degrees. In a large mixing bowl, combine all dry ingredients. Add bananas, non-dairy creamer, shortening and vanilla. Beat until combined. Add eggs and continue beating. Pour into a greased 9×13-inch pan. Bake for about 35 minutes. Cool on a wire rack.
