Spanakopita


I made this for Shavuos and it all disappeared.  It could also be a weeknight dinner with a nice green salad.

1 (16 ounce) bag frozen chopped spinach, defrosted and excess liquid squeezed out

1 onion, chopped and sautéed in 2 teaspoons oil

5 eggs

2 cups crumbled feta cheese

2 cups cottage cheese

1 teaspoon basil

1 (1 pound) package filo dough, defrosted

1-1-1/2 sticks margarine or butter, melted

Handful sesame seeds, if desired

Preheat oven to 350 degrees.  Mix together the spinach, onion, eggs, feta cheese, cottage cheese and basil.  Using a pastry brush, lightly brush the bottom of a 9 x 13-inch pan with melted margarine.  Place filo dough in pan 2 sheets at a time and brush with melted margarine.  Continue until 8 sheets have been used.  Spread with half the spinach-cheese mixture.  Repeat with 8 more sheets filo and remaining spinach-cheese mixture.  Top with the rest of the filo, brushing with margarine as you go.  Brush the top layer with margarine and sprinkle with sesame seeds, if desired. Bake for about 45 minutes until top is golden brown.
