I try to experiment with different ethnic foods. I have a Pad Thai salad that I really like, a Thai chicken coconut soup (stay tuned!) and this. Red curry paste is available online from gourmet kosher markets.
2 tablespoons oil
1 onion, chopped
1 teaspoon minced garlic
1 pound ground beef
1 teaspoon red curry paste
1 cup tomato sauce
½ cup coconut milk
1 tablespoon brown sugar
2 tablespoons lime juice
2 teaspoons salt
Chopped cilantro for garnish, if desired
Heat oil in a large skillet over medium-high heat. Add onion, garlic and bee and sauté until lightly browned. Stir in curry paste and tomato sauce. Cook for 2 minutes, then add remaining ingredients. Continue cooking until thickened, about 5 to 10 minutes longer. Garnish with cilantro (if using) and serve over rice.
