Restaurants around the country have spent NIS 6 million collectively towards kashering their eateries for Pesach. An estimated 35% of kosher restaurants will close their door over Yomtov due to the costs involved in kashering.
According to the ‘2eat’ website survey, 95% of restaurants in Israel, kosher and non-kosher, will be serving matzah to patrons and 15% will serve Pesach rolls.
According to the website’s manager, Noam Shaked, the average cost to kasher a 120-seat restaurant for Pesach is NIS 7,000. The sum includes about NIS 5,500 for kashering the kitchen and utensils and NIS 800 per mashgiach.
