Coconut milk is not “fake” milk. Just because it has the word “milk” in it. Coconut milk is the liquid extracted when you grate the white part finely and then squeeze out the liquid. There are plenty of liquids that are used in place of real milk – Almond Milk, Soy Milk, Coconut Milk. When mixed into a recipe, “milk” doesn’t stand out. I am surprised that you don’t have a problem with parve “creamer”. Cream is dairy. It is used in many desserts!

yaawMemberI love making thai chicken soup.
Sautee some ginger slices, 1 tsp of curry and 2 stalks of lemon grass pieces (hammered to flatten a little – this will let out the flavour) Add 8 cups of chicken stock (I use left over soup from shabbos),bring to a boil for 45 minutes. Add 1 can of coconut milk (not cream), add slices of boneless chicken (raw), and a handful of shitake mushrooms. Cook until chicken is done.
Remove the ginger slices and lemon grass before serving. Enjoy!!!
yaawMemberI am actually buying a new mixer for Pesach. My magic mill (which got a lot of use and I love) just broke. I like the size because I can triple recipes. Can anyone help me regarding size of the different mixers and quality for pesach baking (I don’t need the strength of the motor for challah dough)
