A tzadik follows the word of Hashem, and following chazal is an extension of that, לא תסור מדבריהם but a chumra (even if not bal tosif) is your own idea not the word of Hashem.Shulchan aruch is pretty clear in yore deah 87:5 that it’s muttar, are the 613 not enough for you.
