Because someone who does a mitzva is not harmed. Eating milchigs on Shavous is a mitzva.

But if you take upon yourself this really holy minhag of eating cheesecake on Shavous, then really amazing things will happen to you.

1. Moshe (the one who received and gave us the TORAH) wouldnt nurse from non jewish woman. Therefore to recall his zechus on this day.
2. As mentioned previously now the jews had halachos of Treif animals and shechita their kaylim were treif it was shabbos and they could not do Hagolas Kaylim until after shabbos.
3. Before Matan Torah they were choshed that milk was ayver min hachai and so asur. From the pasuk Eretz zovas cholov oodvash they learnt milk was ok.
4. Chalav is Gematria 40. kineged the 40 days Moshe went up
5.The Midrash states that Har Sinai has 8 names, 1 is Gavnunim because it was white like Gevina. So we eat Gevina as a Zecher.
These are just a few there are many more.

And btw, anyone who has ever had a piece of MY cheesecake (not to brag, mind you), has forgotten all about wanting any meat for Shavuos. All they want is MORE cheesecake. So now I make it in Milchigs AND Pareve, to satisfy all Shittos.

That might explain why we drink milk and/or eat dairy. Nothing to do with cheesecake.

Add in some dollops of chocolate, and it’s taam Gan Eden. Add some fruit pie filling on top and it’s mamesh a balanced meal! Ya got yer basic food groups, protein, calcium, fat, carbs, vitamins, and minerals in one single food aource. What could be bad? The halacha of v’nishmarten me’od es nafshoseichem, would seem to indicate that one should eat a balanced diet. And if you have one nice slice in each hand, that’s as balanced as it gets.

Should he be lactose intolerant or chalilah R”L lo aleinu have an actual aversion to cheesecake, a Rebbetzin should be consulted.
