November 13, 2013 6:09 pm at 6:09 pm #1030190rebdonielMemberI still have about 30 boxes of matzah left from Passover, but that’s plain matzah. ShopRite had egg and bran matzah on sale, which is nice, because it breaks up the monotony for me during Pesach.
While on the topic of cheap things to cook, matzah brei is one of them; matzah, water, egg, salt, pepper, and a little margarine.

budget: 1.5-2$
For 4 persons:
-500g of green beans
-1 small onion, finely chopped.
-4 eggs
-2 garlic cloves
-50 ml of olive oil.
-salt.
-divide the green beans into small pieces.
-Put them in boiling water with some salt.
-wait 15 minutes.
-When they’re cooked, take em out and drain them. set aside.
-Pour some olive oil into a saucepan and heat. When it is hot, add onion and garlic.
-Add the green beans, and fry the mix lightly.
-Add the lightly beaten eggs.
-Mix well until the eggs curdle.

As an update a while back, I did post from another thread that all was on the up-swing. That lasted about a year. Although we have had some setbacks, we are definitely ahead.
New recipe!!
Toss all of the ingredients in a food processor for a few seconds with an S blade:
two apples
two carrots
can of pineapple
bit of orange juice
This recipe came out of the fact that in our area Tomchei Shabbos almost always has a can of pineapple in it and I never know what to do with it!!
Turns out like a fruity coleslaw, but it is super yummy.
Also: lots of cornflakes and zucchini in our Tomchei Shabbos basket. Any ideas??

They use some Parmesan cheese, but I think you could just leave it out. You can easily crush the cornflakes in a ziplock bag, or you might be able to just take the bag out of the box and smoosh it without ending it.
