If it’s low-fat, it’s not potato kugel. Unless you follow WIY’s suggestion.

Haven’t found a lowfat one in the archives. Just this one http://www.theyeshivaworld.com/coffeeroom/topic/potato-kugel

I cant vouch for it since I never made it… But here is a low fat Potato Kugel. Enjoy!

    8 medium potatoes

    2 onion

2 whole eggs plus 2 egg whites, beaten

    2 Tbsp. flour

1 Tbsp. pareve chicken soup powder

    1/4 cup boiling water

1 Tbsp. salt, or to taste

    1/2-1 tsp. pepper

    2. Grate the potatoes and onion by hand or in a food processor. Let stand 3-5 minutes. Squeeze out excess liquid.

    3. Place grated and drained potatoes and onions in a large bowl. Add beaten eggs and flour.

    4. Dissolve soup powder in boiling water, and add to the potato mixture.

Yes, take any potato kugel recipe, put in half as much potatoes, onions, oil, and eggs.

Delicious and half as many calories and fat.

I guess my mom has mad skill. She does get a lot of compliments on her potato kugel.

I once tried making low fat potato latkes. They had no ta’am. I think the oil must be married to the spuds to have any flavor.

That’s like diet coke and a pizza; either have it or dont.

Low fat kugel. What a waste of a good potato. The way we test kugel is, if it sags in the plate, its good!

Make kugel the way your grandma made it; drowning in oil. Just have a smaller slab.
