muffin question – any bakers out there?

    I made a batch of banana muffins, and then split the batter. To 2/3s I added chocolate chips and the the other 1/3 I added white chocolate chips. I baked them side-by-side in the oven.

    All the white cc ones rose beautifully, and all the reg. cc ones are flat.

    Anyone know why? Did I somehow not distribute the baking powder properly throughout the batter, with all of it ending up in the 1/3? Or are dark cc’s heavier than white? Help?

    No clue, but I’ll tell you this…

    Mrs. BP made bannana muffins JUST THIS MORNING! We have had oat, bran, oat and bran, bran and oat, whole wheat for the past countless months, but (and I kid you not) this morning, she baked bannana muffins w/ choc chips.

    Were your white chocolate chips actually chocolate or were they the parve type?

    If they were part, then the dark ones were heavier (because they were actually chocolate) and they sunk.

    Just a thought…

    my two cents…. did you have the batter stiing around after you filled the white cc ones? it could be that the ones that were mixed and put immediately into the oven rose nicely, those that sat around for a while didnt..

    I never heard of chocolate chips in a banana muffin, but it sure sounds good. My theory is that they made the batter very dense, causing it to sink. I am thinking that the type of fat you used was too soft, or maybe you didn’t use enough baking powder.

    jl; I was thinking the same thing.

    SRPsych; i know from a professional point of view that muffins are not to be mixed well, IMO it doesn’t have anything to do with the white or dark ccs, unless you put more chips in one bunch.

    Good luck & keep experimenting, my best work has come from experimentation. (also my worst) 😉

    Most likely the chocolate part got overmixed. When you are mixing muffin batter, you have to really careful not to overmix, otherwise the muffins do not come out light.

    It is possible that the heat distribution is uneven so that some areas are hotter than others. I know of several people that have had this problem. You often don’t know because when you bake a cake or a pie you generally place it in the centre of the oven, but with a couple of muffin tins in the oven, the outer edges of the oven are also being used for baking.

    BP – No, I am not Mrs. BP masquerading… :o)

    jl – actually, the white chips were added second – so, first I added the dark chips, and put that batter in muffin tins, then added the white chips to the remaining batter. So I guess it should have been the other way. BUT

    hudi – yes, they were fake white chips. so maybe lighter (altho the real, dark choco. didn’t sink – they were quite evenly distributed)

    niki – It is a banana bread recipe that I simply poured into muffin tins instead. I’ve done it before; usually they don’t rise, and that’s Ok. But the contrast between the white and dark was so obvious here, I just got curious………….

    Dunno. I never saw a post from you that indicated Sem in EY, so I just guessed that you’re BP or something along those lines. Too bad, I had a funny line, had you been chassidish, but I’ll post it anyways:

    No, that’s just it. Since I never saw a post from you that indicated that you did go to EY sem, I just guessed that you’re either heimesh or chassidish

    (uh oh.. here comes the avalanche of posts slamming me for thinking everyone that goes to EY sem is not heimish or chassidish. But that’s ok.. I deserve some petch today)

    OK, I guess that dove-tails with my “Yeshivish, with a chassidish flavor; like Vein, but not Hungarian” tag, which my wife pinned on me (she btw is not vein and only 50% hungarian)

    There are 2 other labels I just came across which I’m going to dig into later on; someone described herself as “yeshivish, but not an aidel maidel” and the other one is “yeshivish, but with it”

    There was also a passing mention of girls who are described as “out-of-town” in contrast with the yeshivish variations, so that thread should keep me busy for a while

    Kinda confusing, but thats what makes NYC so much fun!

    “Yeshivish, but not an aidel maidel” hmmm, never heard that one. The fact that they use the term “aidel maidel” would probably say something about them….

    “Yeshivish, but with it” This is what I called myself when I wanted a long term learner. It just means that I know whats going on in the world and my head isnt in the sand.

    I think when girls say they have an “out-of-town” personality it means they arent high maintenance, they are easy going and they arent shticky. My mother describes me as such… bless her 🙂

    Chocolate chips DO tend to sink, and in a muffin, versus a cake, it is more obvious. I would try this recipe with MINI chocolate chips and see what happens.

    I know you arent going to believe it but my all time favorite car is the Prius, even though I am not a tree-hugger and I can give to hoots about the environment, you really can not beat the 42 MPG…

    If we were going to go luxury, for an SUV I’d have to say a tricked out Range Rover, IDK thats always been my favorite. Altho, the new Lincolns are looking pretty sweet…

    Sedan, I gotta say the Audi A8. Altho, if we kick it up a notch the new sporty addition to the Maserati family, the Quattroporte looks like something I can get used to.

    Did you see the Hyundai Equus? They are doing some fine things down there at the Hyundai plant.
