I made a batch of banana muffins, and then split the batter. To 2/3s I added chocolate chips and the the other 1/3 I added white chocolate chips. I baked them side-by-side in the oven.
All the white cc ones rose beautifully, and all the reg. cc ones are flat.
Anyone know why? Did I somehow not distribute the baking powder properly throughout the batter, with all of it ending up in the 1/3? Or are dark cc’s heavier than white? Help?
October 20, 2010 9:27 pm at 9:27 pm #703901bptParticipantNo clue, but I’ll tell you this…
Mrs. BP made bannana muffins JUST THIS MORNING! We have had oat, bran, oat and bran, bran and oat, whole wheat for the past countless months, but (and I kid you not) this morning, she baked bannana muffins w/ choc chips.
EERIE!
October 20, 2010 9:31 pm at 9:31 pm #703902blinkyParticipantAny extras?
October 20, 2010 9:36 pm at 9:36 pm #703903hudiParticipantWere your white chocolate chips actually chocolate or were they the parve type?
If they were part, then the dark ones were heavier (because they were actually chocolate) and they sunk.
Just a thought…
October 20, 2010 9:41 pm at 9:41 pm #703904bptParticipantSorry, Blink. For you, its rice cakes and wheat crackers till after sheva brachos (or should I have said shay’vah bruucis ? )
That Kleinfeld creation with your name on it will look oh-so-much better in a single digit size1
After that, you can party like a rock star!
October 20, 2010 9:51 pm at 9:51 pm #703905rcParticipantmy two cents…. did you have the batter stiing around after you filled the white cc ones? it could be that the ones that were mixed and put immediately into the oven rose nicely, those that sat around for a while didnt..
October 20, 2010 9:55 pm at 9:55 pm #703906☕️coffee addictParticipantlol i thought you were going to ask “do you know the muffin man?”
October 20, 2010 10:50 pm at 10:50 pm #703907SacrilegeMemberI thought it was going to be another overweight problem (muffin top)
October 20, 2010 11:32 pm at 11:32 pm #703908rebdonielMemberI never heard of chocolate chips in a banana muffin, but it sure sounds good. My theory is that they made the batter very dense, causing it to sink. I am thinking that the type of fat you used was too soft, or maybe you didn’t use enough baking powder.
October 21, 2010 12:26 am at 12:26 am #703909bein_hasdorimParticipantjl; I was thinking the same thing.
SRPsych; i know from a professional point of view that muffins are not to be mixed well, IMO it doesn’t have anything to do with the white or dark ccs, unless you put more chips in one bunch.
Good luck & keep experimenting, my best work has come from experimentation. (also my worst) 😉
October 21, 2010 1:05 am at 1:05 am #703910niki11784MemberMost likely the chocolate part got overmixed. When you are mixing muffin batter, you have to really careful not to overmix, otherwise the muffins do not come out light.
October 21, 2010 2:01 am at 2:01 am #703911minyan galMemberIt is possible that the heat distribution is uneven so that some areas are hotter than others. I know of several people that have had this problem. You often don’t know because when you bake a cake or a pie you generally place it in the centre of the oven, but with a couple of muffin tins in the oven, the outer edges of the oven are also being used for baking.
October 21, 2010 11:46 am at 11:46 am #703912SRPsychMemberThanks for responses!
BP – No, I am not Mrs. BP masquerading… :o)
jl – actually, the white chips were added second – so, first I added the dark chips, and put that batter in muffin tins, then added the white chips to the remaining batter. So I guess it should have been the other way. BUT
hudi – yes, they were fake white chips. so maybe lighter (altho the real, dark choco. didn’t sink – they were quite evenly distributed)
niki – It is a banana bread recipe that I simply poured into muffin tins instead. I’ve done it before; usually they don’t rise, and that’s Ok. But the contrast between the white and dark was so obvious here, I just got curious………….
October 21, 2010 2:01 pm at 2:01 pm #703913bptParticipantI want to retract the snide comment I made to Blinky. It was uncalled for and out of line. Sorry!
(but is it “brachos” or “bruchis”?)
October 21, 2010 2:02 pm at 2:02 pm #703914bptParticipantAnd SRP –
I know you could not be Mrs BP…. she’s hooked on Imamother!
October 21, 2010 2:45 pm at 2:45 pm #703915blinkyParticipantBP Totty- <sniff sniff>
“That Kleinfeld creation with your name on it will look oh-so-much better in a single digit size1 After that, you can party like a rock star!”- Ha then you can add it your 2 cents in the “why women gain weight after marriage” huh?
By the way its Brachos:) what makes you think otherwise?
October 21, 2010 3:51 pm at 3:51 pm #703916bptParticipantDunno. I never saw a post from you that indicated Sem in EY, so I just guessed that you’re BP or something along those lines. Too bad, I had a funny line, had you been chassidish, but I’ll post it anyways:
May you be zoicha to yingalach with a triple zeros, and maydalach that are not!
(if you know any chassisidhe folks, the joke makes sense)
And who knows? Maybe there’s a chossid on the horizion for you after all? Either way, simchas b’korov!
October 21, 2010 4:04 pm at 4:04 pm #703917blinkyParticipant“Dunno. I never saw a post from you that indicated Sem in EY”- really? which one?
October 21, 2010 4:17 pm at 4:17 pm #703918bptParticipantNo, that’s just it. Since I never saw a post from you that indicated that you did go to EY sem, I just guessed that you’re either heimesh or chassidish
(uh oh.. here comes the avalanche of posts slamming me for thinking everyone that goes to EY sem is not heimish or chassidish. But that’s ok.. I deserve some petch today)
October 21, 2010 4:31 pm at 4:31 pm #703919blinkyParticipantPOTCH!

Or go to Aish.com where there is a food corner by a Mrs. Bixenspanner who has one site on muffins and such only.
October 21, 2010 5:04 pm at 5:04 pm #703924squeakParticipantDitto, Sacrilege
October 21, 2010 5:16 pm at 5:16 pm #703925blueberrymuffinParticipantI have another question on muffins: Does anyone know how bakery muffins get that perfect muffin shape?
October 21, 2010 5:18 pm at 5:18 pm #703926bptParticipantServes me right. Keep it coming…
And Sac, I fully expect you’re year in EY to be post chasseneh, while your shana rishona is shteiging away!
But if you’re not heimish or chassidish or modernish (nice, Ben Torah!) what else is left? My pesonal favorite is “flexidish”
So, Sac.. what’s your tag?
October 21, 2010 5:32 pm at 5:32 pm #703927SRPsychMemberLia – thanks! peppermill is a bit of a shlep for me LOL
but I will check out the aish.com muffin section! 🙂
October 27, 2010 1:38 pm at 1:38 pm #703928SacrilegeMemberBPT
I just found this, sorry.
First of all I’ll take the post-chasunah brocha, but I highly doubt I’ll be living in Israel anytime soon… Not a dream of mine.
I think my tag is Modern Yeshivish.
October 27, 2010 2:11 pm at 2:11 pm #703929bptParticipant“Modern Yeshivish”
OK, I guess that dove-tails with my “Yeshivish, with a chassidish flavor; like Vein, but not Hungarian” tag, which my wife pinned on me (she btw is not vein and only 50% hungarian)
There are 2 other labels I just came across which I’m going to dig into later on; someone described herself as “yeshivish, but not an aidel maidel” and the other one is “yeshivish, but with it”
There was also a passing mention of girls who are described as “out-of-town” in contrast with the yeshivish variations, so that thread should keep me busy for a while
Kinda confusing, but thats what makes NYC so much fun!
October 27, 2010 2:31 pm at 2:31 pm #703930SacrilegeMemberI guess you have that organizational mind where every things gotta have a label, huh?
“Yeshivish, but not an aidel maidel” hmmm, never heard that one. The fact that they use the term “aidel maidel” would probably say something about them….
“Yeshivish, but with it” This is what I called myself when I wanted a long term learner. It just means that I know whats going on in the world and my head isnt in the sand.
I think when girls say they have an “out-of-town” personality it means they arent high maintenance, they are easy going and they arent shticky. My mother describes me as such… bless her 🙂
October 27, 2010 2:46 pm at 2:46 pm #703931bptParticipantYou? Low maintenece? I’ll bet your makeup buget alone could fund a small country. And no Toyota Camry for you and your shanah rishona…. when I see the Nissan Maxima blow past me at 80 mph on the Garden State, I’ll think it was you (The Honda Pilot can wait till you need to drive car pool)
October 27, 2010 2:57 pm at 2:57 pm #703932SacrilegeMemberIts true I do love all things cosmetic… 😀
…And now its just plain freaky that you know I drive fast. Was that an assumption?
(your wrong about the car btw 😉
October 27, 2010 3:52 pm at 3:52 pm #703933oomisParticipantChocolate chips DO tend to sink, and in a muffin, versus a cake, it is more obvious. I would try this recipe with MINI chocolate chips and see what happens.
October 27, 2010 6:07 pm at 6:07 pm #703934bptParticipantOomis, can’t you see we’re talking cars and makeup? Whats with the choc chips? (no offense, but, I mean, cars….)
Sac, Ok, no Maxima / Pilot for you. Hmmm, lets see. What’s appropropriate…?
Baby Lexus SUV? Nah,
Accord, V8, with leather and Bose upgrade? Maybe.
Oh, don’t tell me – a hooked up Caddy, with a cherry light!
VROOOM!
(And forget how I know you speed; did’nt you think its odd I <know> you’ll be passing me on the GSP?
October 27, 2010 6:34 pm at 6:34 pm #703935SacrilegeMemberI know you arent going to believe it but my all time favorite car is the Prius, even though I am not a tree-hugger and I can give to hoots about the environment, you really can not beat the 42 MPG…
If we were going to go luxury, for an SUV I’d have to say a tricked out Range Rover, IDK thats always been my favorite. Altho, the new Lincolns are looking pretty sweet…
Sedan, I gotta say the Audi A8. Altho, if we kick it up a notch the new sporty addition to the Maserati family, the Quattroporte looks like something I can get used to.
Did you see the Hyundai Equus? They are doing some fine things down there at the Hyundai plant.
October 27, 2010 7:02 pm at 7:02 pm #703936shimmelMemberSac you’r Female? I don’t know why i thought otherwise…;)
October 27, 2010 7:08 pm at 7:08 pm #703937SacrilegeMemberShim
LOL.
Not everyday you run into awesome girls like me, huh? 😉
October 27, 2010 8:15 pm at 8:15 pm #703938shimmelMemberOH… i GUESSS not! 🙂
