What is the practical differences, in health and taste and otherwise, between whole milk, 2% milk, 1% milk, and 0% milk?

Go to the grocery and read the label!! (fewer calories, lower fat content)

Regarding taste- 2% has a richer taste, 1% less so, and 0% tastes diluted imho.

Do you drink chalav stam or only chalav YISRAEL?

There’s a milk on the market called skim plus. It’s skim milk, but richer in taste than the more watered down tasting skims on the market. It is chalav stam, though.

Green milk sounds very unappetizing, i use the skim plus, if your used to two percent changing to skim is an adjustment but after a couple weeks you will be used to it.

As far as I know, generally only very young children drink whole (“red”) milk.

Going from red (whole) to blue (1% or 2%) is a short adjustment that once you do, you don’t notice much of a difference. And you gain the health benefits. Going from blue to green (0%) can be more challenging
