I would use duck sauce, but you said diabetic-friendly, so I would do a dry white wine (marinate the chicken first), onion soup mix, garlic (lots) and cinnamon (which is great for DIABETICS).
agree with deiya, but here is another easy relatively diabetic friendly way to make chicken for the seder, saute onions diced carrots and tomatoes(if you use them). Add the chicken skin on and let it stew in it’s own juices. add whatever spices you like. it’s sort of like fricassed chicken, and tastes delicious. if you don’t use tomatoes or spices, leave them out, I did this last year and it was really good. it also warms up really well so it can be cooked before or used as left overs.
Try “unstuffed cabbage” using ground chicken (seasoned as you like). Roll into meatballs. Layer meatballs and bagged cabbage in tomato sauce mixed with equal parts of water, a little salt/pepper, and instead of sugar or honey, use xylitol which has an OU-P.
Is it safe to assume you’re having a diabetic guest for your seder? If so, then why not call him/her and ask what they would like or what is safe/not safe?
