For tens of thousands of frum yidden, meat is not an option so they get their protein from other sources. There can be greater hidur mitzvah with an elegant milchig or fish meal versus some cheap/fatty fleishig entre.
GH – if tens of thousands of yidden can’t eat meat then they get a heter, not a pass.
And I’m wondering – are you trying to say that if you’ve decided to look at meat as cheap and fatty then it overrides halacha? Hiddur is a halachik status, not an opinion.

To have two breads we can have chicken soup after dairy and fish rather than meat itself. I have not found the halacha that only meat is a sudah. The RMA would not say to eat two breads but we must have meat in a sudah.
They have a heter and not that they get a heter based on דרכיה דרכי נועם, the Torah’s way is pleasant and does not force something on the person that is against their health or they don’t like but rather we find an alternative.
