I don’t know if it’s kosher. I like quinoa tabouli. I don’t know if quinoa makes for good falafels. Once I took ground quinoa and made microwaved kneidelach things. They tasted a lot like dense unfried falafels. But I think the texture of bulgur is the secret to making them falafeli.
