Matts makes the type of cookies that no one I met can believe are kosher, let alone parve (and mezonos!). Why bake, when EDITED.

If not – the recipe on the back of a package of Nestle Tollhouse Chips is the absolute best, and I have tried ’em all, (just use the recipe itself, and save the chips for a milchig recipe as they are no longer pareve for some years now). Paszkesz (sp?) and Bloom or Mishpacha all make good chocolate chips. My secret to the best chocolate chip cookies ever, is always putting coarsely chopped walnuts into the batter. It is not the same without it. I also prefer the firmly packed DARK brown sugar to the lighter version or the brownulated, even though the latter is much easier to use.

Disclaimer: I have never tried this myself, I’ve heard it works very well.
Brown sugar has a tendency to harden into a rock-like form. Put a small piece of bread in the package and it lets out moisture so the sugar stays soft and usable.

KaPUSTA- brown sugar also comes in a yellow plastic pack that says on it- the sugar that pours. Same company, same sugar but it doesn’t turn hard. Its great.

‘Hershey’s Soft & Chewy Cookies’
1 Cup (2 sticks) butter or margarine
3/4 Cup packed light brown sugar
1/2 cup white sugar
1/4 cup light corn syrup
1 egg
2 tsp vanilla extract
2 1/2 Cup flour
1 tsp baking soda
1/4 tsp salt
1 pkg (10-12 oz) Chocolate (or any flavor) chips
Beat butter and sugars till fluffy. Add corn syrup, egg and van, beat well. Add flour, baking soda & salt (stir together, first), beating until well blended. mix in chips. drop by rounded tsp (I use a small ice cream scoop)onto ungreased cookie sheets. Bake 8-10 min at 350.
Variation: decrease flour to 2 1/4 cups and add 1/4 cup cocoa to make choc cookies.
I usually use the candy covered choc chips, mixed with regular mini chips in the vanilla cookies and peanut butter chips in the chocolate cookies. YUM!!!

August 27, 2009 12:42 am at 12:42 am #1058471tzippiMemberAbout Crisco: Smart Balance used to make a trans fat free shortening in the same 3 lb. containers, competitively priced. Unfortunately the best you can get now are the expensive tubs. Smart Balance makes a pareve slightly reduced fat (9 grams vs. the normal 11 -13) margarine that can be substituted for regular margarine as it’s still pretty high fat.
A few great recipes:
The “Neiman Marcus” one with the ground oatmeal (grind a lot and keep it in your freezer for easier baking, just freeze in the amounts you’ll need). I leave out the nuts and extra grated chocolate, and instead of 2 cups of margarine, use one each of margarine and shortening, or 2/3 each of marg., short., and oil.
In one of Levana Kirschenbaum’s cookbooks she has a wonderful choc. chip cookie recipe with oil. I’d share it but it’s copyrighted and this is too broad a forum.
Ditto for an out of this world cookie from America’s Test Kitchen. It’s in their cookbooks. It’s a double chocolate chip cookie. A bit of a patchke but sooo worth it. And use Taster’s Choice French Vanilla coffee for the coffee powder called for. (A great sub all the time.)

And lakewoodwife, those sound great. By the way, the Hershey’s “Perfectly Chocolate” cake and frosting are by far the BEST chocolate cake and frosting – moist, long lasting, delicious! It’s on the back of every Hershey’s Cocoa container (and I think that the recipe is in the Kosher Palette or By Design, but not the frosting).

One of the books I’m reading for my journalism class has a really long section on the marketing of Crisco by Procter and Gamble and the effect it had on the advertising industry.

1 c will be 16 Tbsp, which is usually two sticks of margarine but the shortening sticks do seem larger. I do have to ask how big your can is. Most cans I see are 48 oz. (3 lb) which I think is SIX cups.
So if anyone makes the recipe and wonders if they have the right size can, stick, etc. just be sure that you have 1 full cup, or 16 tablespoons.

They only use egg whites and sugar, but you can try substituting Splenda for the sugar or even half and half Splenda/sugar. The meringues are delicious and almost unlimited, in terms of being “legal” for weight watchers and diabetics.

I used to think they were these healthy dietetic oatmeal cookies (boasting oatmeal and raisins). When I started making them I realized that they are super duper in TASTE and in CALORIES!!!

But there are plenty of good chocolate chips on the market that are kosher. Paszkez, Blooms, Liebers, Gefen, etc. Just use the recipe on the back of the Nestles package. The other packages don’t follow that recipe (as far as I know).
