This is comfort food with a little zip!
2 tablespoons oil
1 onion, chopped
2 teaspoons minced garlic
2 pounds ground beef
3 tablespoons cumin
2 tablespoons chili powder
½ teaspoon cayenne
½ teaspoon pepper
1 chipotle chili in adobe sauce, minced
1 (15-ounce) can black beans, drained
2 teaspoons brown sugar
2 cups tomato purée
1 cup ketchup
½ cup water
8 Kaiser rolls
Heat oil in large skillet over medium-high heat. Add onion and cook until soft – about 10 minutes. Add garlic and spices and cook briefly. Add meat and cook, breaking into small pieces, until no longer pink. Add remaining ingredients (except rolls) and bring to a boil. Reduce heat and simmer until thickened – about 20 minutes. Serve over fresh Kaiser rolls.
