This is not only good, it’s super easy.
2 (32 ounce) boxes pareve chicken broth
8 tomatoes, chopped
½ cup chopped green chiles
Garnish:
Tortilla chips
Grated Monterey Jack cheese
2 Avocadoes, sliced
Cilantro
In a medium-sized stock pot, bring broth to a boil. Stir in tomatoes and chiles. Reduce heat and simmer, covered, for about 15 minutes. Ladle into bowls and top with tortilla chips, grated cheese, sliced avocado and cilantro.
