I don’t know about you but since Pesach I have only been looking for light, easy salads to make. Here is a nice one that is good and filling.
1 (1 pound package) frozen cheese tortellini, cooked according to package directions
2 (6 ounce) packages baby spinach
2 cups shredded red cabbage
1 cup chopped tomatoes
2 scallions, minced
2 avocadoes, sliced
¼ cup imitation bacon bits (optional)
1 cup Ranch dressing
In a large trifle bowl, layer the spinach, tortellini, cabbage, tomatoes, scallions, avocadoes and imitation bacon bits, if desired. Top with dressing. Cover and chill for at least 1 hour and up to 3 hours to allow dressing to soak in.
