Ginger Squares


I like everything ginger and this is no exception. 

¼ cup margarine

1 cup brown sugar

1 egg

1 teaspoon vanilla

¾ cup flour

¼ cup chopped crystallized ginger

1 teaspoon baking powder

1 teaspoon ginger 

Preheat oven to 350 degrees.  In a medium saucepan or microwave, melt the margarine.  Stir in brown sugar until dissolved.  Let cool; then beat in egg and vanilla.  Stir in remaining ingredients and pour into greased 9-inch square pan.  Bake for about 20 to 25 minutes.  This is a nice after-school treat or save it for your afternoon coffee before everyone rushes in the door!
