This is a nice appetizer when served on individual plates.
1 pound imitation crabmeat, flaked
3 cups cooked white rice, at room temperature or chilled
2 stalks celery, finely chopped
2 scallions, chopped
1 (4 ounce) can sliced water chestnuts, drained
2 tablespoons lemon juice
1 teaspoon soy sauce
1 – 2 teaspoons curry, depending on your taste
1 cup mayonnaise
Combine all ingredients and mix VERY well. Chill until serving time. Serve on a bed of lettuce.
