4 medium zucchini
¼ cup margarine
½ teaspoon pepper
½ teaspoon salt
Trim the ends from the zucchini and slice it into thin ribbons. Place in a pan or bowl and cover with water. Bring to a boil and cook briefly, about 2 minutes (you can also use the microwave for this. Drain well and toss with margarine, salt and pepper.
