As a Rav I have to disagree with the original poster. The majority of Poskim accept Rav Moshe zatzal’s heter and rule that the halacha permits chalav stam in the US today. There are those who disagree, as always, and there is ground to be machmir for someone who can. Also, anyone who has a specific minhag in his family should follow his minhag. However, I can think of many chumros that have stronger grounds and more serious that most people ignore. For example, chadash is assur mideoraisa according to most Poskim, but many more people are makpid on chalav Yisroel than yashan.
