Almond-Crusted Chocolate Torte


This is very elegant but also easy. Impress your guests!

½ cup margarine

1 cup flour

½ cup sugar

½ cup sliced almonds, chopped and toasted

1 quart pareve chocolate ice cream

2 tablespoons rum

1 cup frozen whipped topping, thawed

In a large skillet, melt margarine. Stir in flour, sugar and almonds. Cook over medium heat, stirring constantly, until mixture is golden and crumbly. Remove from heat. Reserve ¾ cup of the crumb mixture. Pat remaining mixture on the bottom and 1 inch up the rim of a 9-inch springform pan which has been sprayed with cooking spray. Cover with plastic wrap and freeze for 2 hours. Melt ice cream slightly. Gently fold in whipped topping and rum. Spoon into crust. Top with reserve crumb mixture. Cover and freeze.
