I love starch, toast, pasta, blintzes, cheese and sweet drinks. I’m okay with chicken and meat too. I totally hate vegetables. Totally. I really cant stomach them. I almost never eat veggies. And I’m a big drinker… of sweet drinks that is – especially juices. My diet is completely horrible. But as much as I want to change I am never successful.
Can I just continue this trajectory and not worry too much about my current diet?

Do you (or anybody else out in the CR) have any idea how to handle brussels sprouts? Your baked sprouts idea sounds delicious and I’d love to try it.

November 18, 2013 8:52 pm at 8:52 pm #987585oomisParticipantV8 IS a good idea to get the benefits of eating veggies, but the best form is the wholesome whole foerm, which has all the fiber intact. How about mixing veggies into foods, like in a stir fry ot a wrap? Shred some zucchini and make DELICIOUS zucchini bread or muffins. You will NEVER know you are eating a vegetable item. mAke kugels from squash, or make tempura vegetables and fry them (yeah the oil and breading are not so good for you, but hey, we want you to get used to the taste).

I recommend dipping baby carrots or slices of green or purple cabbage in hummus or another healthy dip you like, and eating beans or other legumes seasoned with olive oil, lemon juice, salt and whatever herbs and spices you like. Try getting used to eating whole grains, like oatmeal, kasha or brown rice. With the right seasonings anything is good. Hatzlacha!

November 18, 2013 10:01 pm at 10:01 pm #987589LeebaWMemberIn order to enjoy veggies you have to cut down on the amount of sugar (artificial and otherwise) you eat. When your body is used to eating super sweet candy, it won’t appreciate the more subtle sweetness and flavor of vegetables like red pepper slices or sugar snap peas.
The first and easiest thing to do is to cut out soda and other sweet drinks. Drink water or seltzer instead as much as possible. When you wean yourself off sweetened foods and drinks, vegetables to start to taste good. Not every vegetable of course, but many.
The importance of eating vegetables is not just in the vitamins but because of the fiber, enzymes and phyto-nutrients that you can’t get from other sources. Vegetables make meals much healthier and satisfying (you can fill up while keeping calories in check). Feel free to add butter and garlic if that’s what it takes – it’s still healthier than eating french fries.
November 18, 2013 10:12 pm at 10:12 pm #987590Boro Park GirlMemberi can sympathize 1 billion percent because my diet is similar however I do eat veggies but cant look at chicken or meat in any form.(meatballs in tomato sauce once in a while is ok but like once a month is too much.
I just try to drink water or seltzer when i can and try to eat veggies with my starches-i know this is not an option for u- but u can try to make small changes and u will see they will make a difference. i thnk trying to drink water and spreading out the sweet juices will help u.

November 18, 2013 10:35 pm at 10:35 pm #987591rebdonielMemberPerhaps try hiding your vegetables; my grandmother, a”h, used to “hide” vegetables in mashed potatoes and give it to the kids (spinach works well). You can try adding cauliflower to your potatoes as well. Kugels are a nice way to get vegetables, and you can even try making roasted veggies; zucchini, butternut squash, acorn squash (with butter, brown sugar, and cinnamon), carrots, cauliflower, broccolini, etc. are all very yummy roasted.
You can even try making latkes made from vegetables like carrots, zucchini, and whatnot.
You can also make a braised red cabbage. Red cabbage braised with onion, apple, raisins, a little sugar, and some apple cider vinegar is a delicious vegetable dish, and very nutritious.
I’ve been losing a nice amount of weight by replacing starches with vegetables. I eat Israeli salad every morning, with a hard-boiled egg, and some cold asparagus or broccoli, for lunch, I have a salad of spinach, yellow peppers, chick peas, and cucumbers, and for supper, I’ve been eating smoked salmon with steamed broccoli, a leafy green (such as kale, cabbage, or chard), lemon for flavor, and tomato, onion, and capers. I also like making new kinds of vegetable stews and soups without added oil, and experimenting with new stir-fry dishes, too. I have about 150 lbs, in total to lose, and for me, this is a new way of life more than anything else.
