June 16, 2011 10:38 pm at 10:38 pm #777785Mother in IsraelMemberHere’s a good zucchini soup recipe. Saute 2 onions but not until brown (don’t want the soup turning brown). Add 8 large unpeeled zucchinis, 2 potatoes, water, salt, and pepper. Cook for 1 hour and then blend with an immersion blender. Cook for at least another hour. Soup will be thick and yummy.

June 16, 2011 11:56 pm at 11:56 pm #777788Mother in IsraelMemberI just remembered a great milchig mushroom soup I used to make.
Saute an onion in butter. Add a can of mushroom pieces without the liquid. Add 2 T flour and a container of shamenet. Stir. Add 3 cups water, 3 cups milk, and 6 T mushroom soup mix. Bring to boil and simmer for 15 minutes. It’s heavenly.

June 17, 2011 1:06 am at 1:06 am #777790flyerParticipantOne of the magazines had an interesting and delicious sweet pot soup – it is basically potatoes, sweet potatoes, sauteed onions and coffee rich (you can put in milk or pareve milk) with spices. Blend it.

For an 8-quart pot:
Saute in a few tbsp oil:
onion or two
bag of cole slaw mix.
Add:
3 whole beets- they’re easier to dice or shred once cooked
3 potatoes
1 small can tomato paste OR large can tomato sauce
bay leaf, parsley flakes, onion and garlic powders, salt, pepper.
Fill with water, and cook 2-3 hours. Serve with a dollop of sour cream or mayonnaise in each bowl and raw garlic cloves.
Can be made with meat or chicken in it.
June 18, 2011 12:36 am at 12:36 am #777798gefenParticipantthis thread (especially what pac-man wrote – chicken and water) reminds me of a funny story.
one time, my friend was kind of tired erev Shabbos, so her husband asked “what is so hard about making a chicken soup? if you want, i’ll make it”. of course that was too good to pass up. so he made it. it took all of about 5 minutes. she couldn’t believe it – UNTIL it was time to serve it.
he had not peeled the carrots or cleaned the chicken etc. etc.
YUM YUM!!!!!!
