There might be a thread already started on this, but if not does anyone have any easy healthy food recipies that are low fat and low cal?? I’m looking for salad ideas and like dinner menues. Thanks!!

Peel and cut into small cubes or thin slices.
Bake uncovered until soft. I like to leave it longer until it becomes a little browned.

Ingredients
* 4 portobello mushroom caps
* 1 tablespoon olive oil
* 4 shallots, thinly sliced
* 1 cup white wine
Directions
1. Preheat grill for high heat.
2. Place mushrooms onto the grill, smooth side up. Grill until they start to soften, about 10 minutes. Turn over, and grill on the other side for about 5 minutes.
3. Meanwhile, heat olive oil in a large skillet over medium heat. Add the shallots, and fry for a few minutes, stirring frequently.
4. Remove mushrooms to a cutting board, and slice. Place into the skillet, and increase the heat to high. Cook for about a minute, then pour in the wine. Continue to cook and stir until the wine is nearly evaporated. Remove from heat, and serve.

Ingredients
* 1 lime, juiced
* 1 (12 fluid ounce) can light colored beer
* 1 teaspoon honey
* 2 cloves garlic, minced
* 2 tablespoons chopped fresh cilantro
* Salt and pepper
* 4 skinless, boneless chicken breast halves
Directions
1. In a bowl, mix the lime juice, beer, honey, garlic, cilantro, and salt and pepper until the honey dissolves. Pour the mixture over the chicken, cover and marinate for 30 minutes.
2. Preheat an outdoor grill for medium heat and lightly oil grate.
3. Remove chicken from marinade and shake off excess; discard remaining marinade. Grill chicken until tender and juices run clear, about 7 minutes per side.

Fit For Life is a good healthy Cookbook that introduces the concept of food combining. The idea is certain foods eaten together are good for digestion and will not (according to the Diamonds- the Author) cause digestion problems. The Rambam was a Master Herbalist and Nutritionist who knew the same info. regarding food combining about a thousand years ago. This is an interest of mine (diet and nutrition) for almost forty years, so if you are interested in ideas for changing eating habits I will be happy to share.

If I am going to make a cake that calls for 1 cup of oil, do I put in 1 cup of applesauce? and also is it the store bought kind that is much thicker or do I use the homemade ones that are much jucier?? This sounds very interesting.

January 13, 2010 7:09 pm at 7:09 pm #693516bptParticipantWhat’s cooking and Salad Time are great resources. Most of the recipies call for things that a normal household has, and the quantites are geared for 5-6 portions.
On the topic of healthy eating, a good rule of thumb I read (when dealing with commercially made food):
Avoid anything with more than 5 ingredience (5 types of spices count as 1, as does 5 vegtables)
Avoid anything hydrogenated.
Homemade food usually elimanates the hydro part, esp. if you use oil instead of margarine.
January 13, 2010 7:41 pm at 7:41 pm #693517oomisParticipantMargarine is basically hydrogenated oil, with the hydrogen added in order to thicken it to solidify it. There may be a reason for that consistency in a recipe and oil or applesauce may not work for the texture of the finished product.

Cook everything with Pam, oil has to be banned from the kitchen (only use them for challahs and desserts for shabbat)
Make meals filling with steamed vegetables or stir fries with Pam.

January 14, 2010 4:12 am at 4:12 am #693520yankdownunderMembersmartcookie- Morning Time- I eat Oatmeal with Blueberries sweetened with Honey. I pour Oat Milk on top of the Oatmeal. I take a Muli Vitamin with Supplements to keep my Immune System Healthy.
Tea Time mid morning break two or three Cookies and a cup of Herbal Tea.
Lunch Time a Sandwich and a cup of Tea usually after Lunch.
Dinner- Soy Protein or Fish, Pasta, Brown Rice sometimes, Potatoes. Water or Herbal Tea after the Dinner Meal. I try to follow the principle (endorsed by the Rambam) to wait several hours before retiring after eating dinner.
Smart Cookie if you want to create Healthy Changes in you and your family start Shopping (as much as possibe) at the local Natural Food Store. If you can afford it purchase (if you do not own one) a decent Pressure Cooker. Stock up on Whole Grains and Legumes. Whole Grains and Legumes purchased not processed generally do not need a hecscher. You must however check for Bugs. Olive Oil (Kosher Naturally) is a good choice for healthy Oil. Natural Food Stores provide an assortment of Healthy Cook Books for sale. Good Luck.

If you’re gonna eat cheesecake, EAT CHEESECAKE already. There is nothing worse than a cheesecake that has been de-fatted, de-sugares, de-sour creamed, and so forth. You can try using neufchatel cheese (a lower-fat version of cream-type cheese), but come on, who is kidding whom? If you are diabetic and desperate, then make it with Splenda, but it will not taste the same, no matter what ANYONE promises you. It is only for someone who really is going nuts without the cheesecake but cannot eat the real stuff. Have the real thing, but stuff yourself with lots of fresh veggies first, and maybe some soup, so you are less inclined to eat a LOT of it in one sitting.

My suggestion was for people who who really cannot rbing themselves to just eat the cheesecake as is. But you are absolutely right – it really doesn’t amke it that much more healthy, and the calorie benefit is so negligible so as to be worthless. Just eat it and enjoy the real thing. Don’t have it all day every day. Once in a while will not kill anyone.
PS – I misread a line that was actually being directed to you as the member name “cheesecake.” I thought it was talking about a recipe for lighter cheesecake – hence, my previous post. I really must learn to read,not skim. 🙂

ps. yanksdownunder – my mum was suffering from digestion problems and she got the rambam’s sefer and follows all the things he says u shud/shouldnt eat and also what food combinations to have and since then she hasnt had the problems. the rambam was the master doctor in all these sort of things so anyone who can understand the rambam’s sefer it’s probably the best health food book.

Most are quite simple, nutritious, and very flavorful with lots of interesting spices. There are many cookbooks including two we have that contain recipes from the 2500 year old Jewish community of India. I don’t want to post them because of copyright considerations but if people want I can post the names of some of the cookbooks.

1 1/2 c whole wheat flour
2 tsp. baking powder
1/2 tsp. salt
3 T oil
3 T apple sauce
1/2 c sugar
1 egg
1 tsp. vanilla
1/2 c soy milk
Mix above ingredients. Then pour in 3/4 c bluebberies and mix lightly with a spoon.
Topping: (Before you put in oven)
1 T oil
2 T brown sugar
1/4 tsp. cinnamon
1/4 c chopped walnuts (optional)
Set oven to 400 degrees. Bake for 18-20 minutes.

Brown sugar (instead of white) may offset the whole wheat taste.
August 30, 2010 1:45 am at 1:45 am #693535BOSDParticipantOh I have a million recipes to add to this. I guess the main thing I learned while losing a pretty significant number of pounds is to really really enjoy cooked veggies.
I use a lot of frozen vegetables which are expensive, but save mountains of time. Some ideas:
Dice an onion and a clove or two of garlic really fine. Add a bag of frozen spinach, some salt, black pepper and whatever spices you are in the mood for, then when it is almost cooked add an egg (or to reduce calories even more try just the white, I do it and it’s delicious!) and stir vigorously so the egg doesn’t clump.
Place a bag of whole frozen green beams in a pan, add kosher salt, pepper, onion powder and minced garlic. Bake for a while uncovered at at least 415. You can add sesame seeds for a great taste, but they add fat.
Also for green beans- I use a wok, but a deep frying pan should work- brown onions and fresh garlic, then add the green beans and add some soy sauce and spices.
I basically eat grilled chicken breasts every night, so I have loads of ways to cook them. The basic way is to spray them with Pam and sprinkle with spices. For schwarma type chicken I use pereg schwarma spice- but it’s too spicy for my taste so I use otherspices like salt pepper onion and garlic powder too. Also, sometimes I cut up the chicken halfway through broiling and spray again with Pam then put back in the broiler for another couple of minutes.
Hope this all made sense, I typed it up on my iPod touch so I probable made a bunch of typos…
I’ll try to think of more recipes to post…
