Most of the cinnamon on the market is actually cassia or Saigon cinnamon. True cinnamon is Ceylon cinnamon, and it’s less sharp and more flavorful. Even though it can only be used to make synonym buns, this is actually a good thing. More spices should be mislabeled. I want to buy minced garlic and get black pepper instead. Variety is, after all, the spice of life.
