Matjas is my favorite, with Schmaltz a close second. Pickled is bal tashchis.
While some of the new types/flavors are tasty, I must make a Macha’ah because they are not part of the Mesorah. [That said, I will not turn down a piece of Jalapeno herring. The pepper-crusted ones are also delicious].

Sorry, but herring is not part of our “Mesorah” simply because it was a poor man’s “fish” in parts of the alte heim.

Geez, just because you’re a Liberal – that doesn’t mean you gotta get everything Wrong!
They did pickle Herring to make it last longer.
So that was convinent for poor people.
But I knew a rich guy that was rich in Europe, before he came over.
He said that he went to the Shoreline and right when the the fishing boats came in, he would take the fresh Herring and eat it raw.
This was a delicacy.

True excitement is a bluefin and yellowtail tuna inside out sushi roll with brown rice and nori with only a small dab of wasabi. It is also more consistent with Mesorah whose prime directive for personal behavior and nutrition is u’shmartem es nafshosechem.

My mother AH used to buy it fresh and then just let it soak overnight to make less salty, then filet it and that is how we ate it

It goes back much further than that.
זָכַ֨רְנוּ֙ אֶת־הַדָּגָ֔ה אֲשֶׁר־נֹאכַ֥ל בְּמִצְרַ֖יִם חִנָּ֑ם
The only free fish worth waxing nostalgic over is the herring served at a kiddush. Of course, there are other free fishes in Jewish life (e.g., lox at a bris, tuna salad at shalosh seudos) but they’re either not nostalgia inducing or are too infrequently enjoyed free to make sense in context. Granted someone makes or sponsors a kiddush so the herring isn’t really free, but it is free to eat, and that is what the complainers remembered. Careful reading of the pasuk shows that they remembered that the eating was free, not that the fish itself was free.

Salmon has the distinction of being mostly farmed fish, full of antibiotic and anti parasitic meds. The pellets that they are fed come from any fat and protein sources they can find cheapest. The fat content is stabilized with a product of Monsanto (yemach shemam) The artificial diet often does not produce great flavor or orange flesh. This is remediated with artificial dyes and flavor infusions. This is the going menu for American and Norwegian product, For Asian suppliers the picture is way bleaker
In my younger years before I became an extremist vegetarian, I caught herring off south shore Long Island, When the fish were opened, there was a black slime on the belly wall. I seriously doubt that old timer’s knowledge. If it was gutted correctly [i. e. Kosher] than it should not have been anything from outside the fish. But to be honest, they say fishing areas are a lot less polluted than they were decades ago. Any idea it was Blueback or Alewife?
