Orzo With Dried Cranberries & Pistachios


An easy yet beautiful side.

1 box orzo, cooked according to package directions

2 tablespoons oil

1 onion, diced

1 (8 ounce) package sliced mushrooms

½ cup dried cranberries

½ cup roasted pistachios

Sauté onions and mushrooms in oil until soft. Stir in cranberries and mix well. Toss with orzo. Sprinkle with pistachios.
