They don’t accept the written Torah as an inherently binding legal text– their Torah she’baal peh can go anywhere, even in direct contravention of pshat. So to say, “But it’s right there! They KNOW it’s forbidden!” is misleading, because while they can see the same words that we see, they don’t operate on the same level of “it’s forbidden” that we do.
