Tomato & Olive Salsa


1 pound hot house tomatoes, diced

½ cup chopped cilantro

¼ cup green olive rings

1 pickled jalapeno, diced

2 teaspoons pickling liquid

1 tablespoon capers

2 teaspoons ketchup

2 teaspoons olive oil

1 teaspoon kosher salt

½ onion, minced

Toss together all ingredients and let sit at room temperature to blend flavors.  Serve immediately or store in the refrigerator.
